I use whole wheat macaroni, low-fat cheese, soy milk, and egg beaters to make mine. It's a baked recipe, but I don't really have specific quantities. Here's how I make it:
1. Preheat oven to 350.
2. Fill a casserole dish about halfway with the whole wheat macaroni. Dump out.
3. Spray butter flavor Pam in casserole dish.
4. Boil water and cook macaroni.
5. Put a thin layer of low-fat cheese on the bottom of the casserole dish. Follow up with enough macaroni to cover the cheese. Repeat until casserole dish is about 3/4 full. Then put a layer of cheese over the top so you can't see the macaroni.
6. In a small dish, beat the soy milk (I use one of those small cans, about a cup or so) with egg beaters that work out to about 2 eggs' worth. Pour the liquid into the casserole dish, ensuring that it distributes evenly through the macaroni and cheese.
7. Bake for about 30 minutes or until mixture is boiling and top is golden brown.

LOL - I had mac and cheese last night! I'll try to post the recipe from memory - it was FANTASTIC - I stuffed myself!
1 can creamed corn (15oz)
1 can tomatoes with green chilies (14.5oz)
12 oz noodles
1 tsp chili powder
1 c. grated cheddar cheese
Cook the noodles. Drain. In same pot heat up the corn, tomatoes, chili powder and cheese until boiling. Add noodles, stir. Voila!
Not traditional mac & cheese but pretty fabulous. And super-after-work-easy.

For some reason the hubby and I both have at various times this last month craved mac'n cheese. (went to the speciality market both times to get their version which is quite good.)
Both recipes look good and are different enough from each other that I could make either both during the same month.
Probably wouldn't do whole wheat, but I love Barilla Plus and it fills you up.

My mother uses real cheese and adds in stewed tomatoes (gag) and diced peppers and onions.
