I don't know if you guys get Skor bars in the states... they are DELICIOUS. Chocolate covered toffee. MMMM

Anyhow, two different people have made this and served it at parties over the years, and I got the same recipe from both of them, but I kept forgetting to make it. I finally had a chance and YUM YUM YUM they came out great! It's actually kind of impossible to fuck them up.


Brace yourself. The recipe is BIZZARO! Saltines. Yes. Soda crackers. You heard me right. Butter, brown sugar and chocolate chips. That's it.

You have to use salted crackers for this recipe. It may sound strange, but the layers of the cracker and the salt, combined with a brown sugar and butter syrup and chocolate, makes for a candy that is much more than the sum of its parts. Enjoy!

Cracker Toffee
1 sleeve rectangular buttery crackers
1 cup butter (NO substitutes!!)
1 cup brown sugar
2 cups milk chocolate chips
Preheat oven to 350 degrees F. Line a sturdy cookie sheet or brownie pan with heavy duty foil and line with the crackers, making sure to place the crackers in a single layer, edges touching. You can break some crackers to fill the pan completely if you need to.

In a small saucepan, combine butter and sugar and bring to a boil. Boil, stirring constantly for 2 minutes. The mixture will gradually combine and form a thick sauce. Be careful with this sauce; it can burn very easily. Carefully pour the sauce over the crackers. You can gently spread the sauce to cover all the crackers with the tip of a spoon. Bake the mixture for 10-12 minutes, or until the sauce bubbles all over its surface.

Remove from the oven and immediately sprinkle with the chocolate chips. Return to oven for 1 minute to melt chips. Then remove from oven again and, using the tip of a knife, spreadthe chocolate over the toffee. Let cool completely, then break into squares. Makes about 36 pieces.
I haven't had a Skor bar since I was a kid, but the only thing that I remember about them was that I thought it tasted like Chocolate covered roast beef.
I LOVE Skor bars, or Heath bars-- we have both down here and they are the BEST.

Sounds like a strange recipe but sort of similar to mock apple pie, no apples but the ingredients combine to make it taste like it (supposedly, I haven't tried it myself Wink
Actually, it turns out that butter and brown sugar make toffee and the chocolate is the chocolate. LOL! I honestly don't know how the crackers factor in, other than they make it crunchy. They do not detract from the flavour at all, but rather add to it.
I've made this a bunch of times and it's always disappeared in minutes when I've taken it to work. People LOVE it! I made it a few times for charity bake sales and it always went over very well. I got my recipe from a Kraft Food and Family magazine 3 or 4 years ago. The only difference is that my recipe adds some kind of nuts to the top like crushed walnuts or pecans, but you could use whatever you prefer.
