I know this might shock you to see me in this forum but this just sounds super good and easy to make.

GREEK PASTA SALAD

12 oz Penne Pasta (that's 4 cups uncooked)
2 cups plum or cherry tomatoes, quartered (it's MUCH better with fresh-off-the-vine tomatoes, peeled and diced)
1 cucumber, peeled, halved, seeds removed, and diced
4 green onions, chopped
1/3 cup (small can) sliced black olives

-- DRESSING
-- 1/2 cup olive oil
-- 1/2 cup lemon juice
-- 2 tbsp fresh basil (or dried, crushed) -- I chiffonade them
-- 2 tbsp fresh oregano (optional) -- I don't use it
-- 4-6 minced garlic cloves (I buy minced garlic in a jar)
-- 1/4 tsp salt
-- 1/4 tsp pepper

Feta Cheese to taste (I use Parmesan)

INSTRUCTIONS
-- Cook pasta
-- In a large bowl, toss pasta, tomatoes, cucumbers, onions, and olives
-- Combine dressing ingredients and shake until blended
-- Drizzle over pasta and toss
-- Serve warm or cold
-- Sprinkle with cheese
AWESOME! I'm a sucker for Greek salads, and this is one better.
